Or the turnover is simply too slow, which is *not* doing something right.

I don't know that's the case, but having been in the restaurant business (as well as being a customer!), I know that many "full" places aren't doing things right at all.

The pizza at SDC doesn't even compare to the #1 pizza in Missouri at Reed Springs.
